Gellan gum is widely used in the food industry for gelling, thickening and stabilizing. It has particular application in formulations with high sugar or starch content. Gellan gum systems show excellent stability (heat, acid and base) and also give fluid gels when sheared during cooling and are therefore ideal for use in suspension and pumping or filling applications.
Coatings: gellan gum can be used in the preparation of films and coatings for breaded and battered products (such as meat, fish, vegetables, cheese) and also for dough wrapped products (such as pizza rolls).

(a) ability to reduce oil absorption through creation of a barrier;
(b) heat stability provides crispness to baked or fried products after frying or baking;
(c) ability to process hot by spraying or dipping and cooling;

(e) can be used in partially baked and frozen low fat products to give the appearance of a fat-fried product. LA gellan gum is used in fat-free adhesion coatings for nuts, crisps, crackers, cookies, pretzels, rice cakes.
